Curious about the process for creating the Ripasso? Here are some more information!
- First, we ferment fresh grapes for Valpolicella.
- Then, we store the wine in a steel tank and ferment dried grapes for Amarone and Recioto.
- Once this fermentation is done, we refill the Amarone or Recioto wine from the tank, leaving some wine and skins behind.
- This tank is then filled with Valpolicella, undergoing a second fermentation in contact with the fermented grapes.
